    I made this. Everything came out perfect & the consistency of the dough &
    custard was exactly like yours, until the point where i used a cake tray &
    it didnt get backed well. I made it the second it time again today & used a
    flat tray, everything came perfectly again till the last point, it rised &
    it was time to take out (i kept exactly same temp & timing like yours) but
    i dont know why the top didnt turn brown color. i had put it at the centre
    of the oven. I left another extra 10 mnts also but yet the top ws not
    firmed & had not changed color but after taking it out, it ws almost there
    but the bottom ws slightly burnt. I put alot lot of effort to do it
    perfectly, i dont know why the top ws taking time to change color.

    Hi Stephanie, your recipes are wonderful. I tried to make eclairs but the
    mixture became a bit too runny. I think that is why it didn’t turn out
    well and became hard as a cookie. Also can you explain why flour has to be
    dusted on a buttered pan. Thanx.

  5. about to make these for the third time. They are so good! I am a 15 year
    old guy and people are surprised if they find out I cook… lol just follow
    the directions and your good and once you are done you get a ton of good
    food all to yourself :P

  6. What can you use instead of vanilla extract because I don’t have any
    because we through it out because it had alcohol in it.

  7. do we need to put the pastry cream inside the fridge after it cooked and
    cool down? in case to make it more solid and can stand for two or three
    days

  9. Y do they call them eclairs? Do you have to put like the pastry stuff in
    the middle? Do you have to put chocolate on the top? Can it be plain? Can u
    put anything except chocolate on the top? Plz answer thank uandu might
    think these r stupid question but I am new in baking thank u :)

  10. What if I put chocolate extract or cocoa powder in the cream instead of
    vanilla and not have a glaze at all? Would that work?

  13. First of all I must say that I absolutely love your website and that I have
    succeeded in every cake I made following your recipes. I tried this one few
    days ago, and although the result was very similar to the eclairs you show,
    I found that the pastry was not “crusty”, it came out of the oven very
    soft. Any tip for that? Thank you.

    “real ones” or compound ones? I feel that if I use compound chocolate I
    don’t need to temper and I can simply melt it and use it .Am i right ?
