But just remember, there are times when eating chocolate has nothing at all to do with skill or identifying flavors, but is simply for pure indulgence. For me, this might mean a sea-salted caramel at coffee break, a Madagascan truffle at 2 o'clock to pick me up, and a dense nugget of my famous chocolate brownie at 4 o'clock which, for me, is by law teatime, when eating something sweet and indulgent is absolutely compulsory.

Born in Yorkshire, Paul started work as a pastry chef for Marco Pierre White at The Criterion, London. He later became Head Pastry Chef at Quo Vadis in Soho before giving it up to make chocolate. Paul's chocolate has won many awards, including gold medals at the World Chocolate Awards. He has appeared on BBC2's Food and Drink, ITV's This Morning as well as UKTV Food's Great Food Live and Market Kitchen.

The book was "used" but seemed brand new to me! Wonderful book w great recipes. Will not be getting rid of my copy any time soon! Thank you.

- Reviewed in the United States on October 4, 2012"80 Sensational Recipes" doesn't even BEGIN to cover the amount of content in this book. There's so much to talk about I'm not even sure I'll have space to mention them in this review!
From the opening pages, in which Young instructs his readers in his method of fully enjoying the consumption of chocolate, I knew I was in intelligent, passionate hands. Here is a man who knows his chocolate and absolutely loves it, and every page of this book shows that. Colored with Young's personal touch, each recipe feels like a baker's secret, handed over in hushed tones, only to me. And my goodness are the results astounding! The range of recipes are fantastic and their quality is positively striking!
Even more than that though, I learned SO MUCH from Young's helpful instructions in technique - he taught me to use chocolate in ways I hadn't even heard of, and the instructions were clear and easy to follow! Furthermore, Young demonstrates his extensive knowledge of regional chocolate and its origins - listing how each kind is different, and even exactly how to procure it! These of course can be expensive steps to follow, but local chocolate generally works just as well.
Major kudos to Paul Young, for bringing the recipes and techniques of masters to the baking public!

- Reviewed in the United States on November 30, 2015Just received this book. The recipes in the book are "different". I have made chocolates for years (about 20) and have mostly stuck with the basic fondant fillings, or a peanut butter chocolate filling. The recipes in this book are definitely "thinking outside the box", definitely suits the title "adventures with chocolate". For me the only "down side" is that the recipes are in the US cup measurements instead of weight measurements. Probably because this is a US edition. But the book is wonderful. I am so looking forward to embarking on this chocolate adventure.

I have to start by saying that this book has a lot of information on chocolate in it! The beginning of the book helps you learn about types of beans and chocolates, where chocolate comes from, and even how to eat chocolate properly. (No, you don't just gobble it up like I have often been known to do.) The book is loaded with color photos. Not all recipes have them but things like the tutorials have multiple photos so you can follow along. I'm not sure where you'd get some of the ingredients needed for these recipes, perhaps a specialty store? Recipes that made me want to eat include Trifle Of Four Chocolates, Citrus Fruit Confit, and Venezuelan Chocolate Pancakes With Chocolate Maple Syrup. This book would be great for anyone that truly loves chocolate and wants to learn how to use it to make far from ordinary creations.

This is NOT "The Ultimate Brownie Book." For those who want to push the envelope on innovative recipe ideas, Adventures with Chocolate is what it says on the cover: "an inspiration."
Paul Young provides a few uncommon sweet ideas, a good number that are both sweet and savory, and several ideas for chocolate with rosemary, Stilton, and ale. We have modified some of these ideas for vegetable dishes in our kitchen. I'm working my way up to the recipe for pizza that appears as an afterthought to the caramelized red onion and rosemary truffle recipe.
I rate cookbooks by the number of novel recipes in them. This book pushes the envelope to reward the adventurous. It makes a fine gift for the molecular gastronomist in your crowd, or chocoholics working to slash flour and sugar from their repertoire. I give Adventures with Chocolate five stars, but be warned they are weird stars and that Young has avoided recipes you'd expect to find in other books. If you really wanted The Ultimate Brownie Book or Nick Malgieri's Chocolate book, you could find this one uncomfortable.

Paul A Young's book is a great resource for making your own fabulous choc creations. The recipes are varied, the friendly writing style makes everything seem achievable, I read the whole book before choosing to make a couple of things, and both turned out well, the fresh raspberry ganache was extra special. You need plenty of time to make your own chocs, but on this showing the effort is definitely worth it. Other recipes for desserts are tempting, and there are plenty of other unusual dishes including savoury ones .
Paul's enthusiasm for the subject, and his generous sharing of tips and techniques, make this a good and useful purchase. Buy one for yourself, or give to a friend, you won 't be disappointed.

I bought this as a Christmas gift, but when it arrived and I flipped through it I realized it would entail hours of hunting through speciality stores to even make one recipe. I had to find a new gift. A nice book, but only if you have access to a lot of hard to get ingredients.

I requested my brother buy me this one xmas as Id seen Paul A. Young on Market Kitchen and was impressed. The book has some great, innovative recipes in there and some great explanations on how to temper chocolate, and ideas on flavour pairings to give you some confidence to try your own recipes with chocolate. Not only that, the photography and styling in the book is absolutely gorgeous and its just a lovely thing to flick through. I used some of the ideas in to make two types of truffles for on top of a cake and it was so well received by my sister in law I bought her the book too as she wanted to make some! Its a really lovely book well worth the modest price tag, anyone who likes a bit of cooking beyond the norm or just generally loves choccie will really love this book.

If you're starting out in the world of chocolatiering this is a brilliant book. It gives you the confidence to try out all sorts of recipes and you get to enjoy eating them as well!
An extremely, clear and accessible book with a broad selection of chocolate recipes using: herbs, spices, drinks, alcohol and general food etc.
It has certainly entertained friends and widened our appreciation of good quality chocolate moving away from the sugar rush and towards the more sophisticated taste of dark chocolate including it's health benefits.
Paul Young writes in a very entertaining and down to his Yorkshire earth way.
Explanations and photos are excellent throughout.

I bought this book to add to my collection of books on chocolate after 'looking inside' on Amazon (a great idea) and reading previous reviews.
He has some very interesting recipes, not just for chocolates and truffles but also sweet and savoury dishes. There is a good introduction and notes on 'how to taste chocolate' and he shows boundless enthusiasm for his craft.
Some of his recipes are very unusual (marmite ganache for example) but all worth a try as they will be interesting to taste and there is obviously a place for them.
I had hoped there might be some notes on pairing wine with chocolate.
I am looking forward to working through many of his recipes.
