Scharffen Berger Lace Cookies

Instructions

1. Position the racks in the lower and upper thirds of the oven and preheat the oven to 375 degrees F. Line two baking sheets with Silpats or parchment paper.

2. In a medium bowl, combine the flour, sugar, cinnamon, baking powder, salt, and oats. Set aside.

3. In a large bowl, combine the butter, cream, corn syrup, vanilla, and rum. Stir until smooth. Slowly add the dry ingredients, stirring to combine.

4. Drop about 3/4 of a teaspoon of the batter onto the prepared baking sheets. Make the cookies as close in size as possible. Place only 12 cookies on each baking sheet (four rows of three), as they will spread considerably.

5. Bake the cookies for 8 to 10 minutes, rotating once halfway through baking. Remove from the oven and let stand on the sheets for 1 to 2 minutes. If any of the cookies have run together, cut them apart, then transfer the cookies to cooling racks to cool completely.

6. Drizzle the top of each cookies with melted chocolate.

  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup old-fashioned or quick-cooking oats (not instant)
  • 1/3 cup (generous 2-1/2 ounces) unsalted butter, melted
  • 2 tablespoons heavy cream
  • 2 tablespoons light corn syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon dark rum

Delicious chocolate with fruity undertones, but box is surprisingly small
If you are a fan of dark chocolate, than this box of Schaeffen Berger tasting squares would be a real treat. The chocolate is creamy and smooth, and has wonderful fruity undertones and a tart aftertaste. The intense chocolate flavor will linger on your taste buds long after the chocolate is gone. The Milk version is a little more intense than regular milk chocolate, but still velvety smooth and rich. It also has the signature fruity Scharffen Bergen flavor that hints of berries and citrus. The 62% Semisweet is as smooth as the Milk but has that extra little bite of cocoa. The Milk and 62% Semisweet were by far my favorites. The 70% bittersweet is good but was verges on being bitter, and the 82% Extra Dark is just a little too bitter for me to enjoy. Also be aware that the box, while adorable, is a very small (6" x 4-1/2"). The box is very well made and has a magnet snap that keeps it closed. There is a very nice label and a cute little bow. But it is small. You don't really get a sense of how small from the manufacture's photos. The squares of chocolate are also petite. They are slightly larger than 1" square and about 1/8" thick. Just enough for a single bite or taste. Honestly I felt an overwhelming urge to unwrap three or four and pop them all into my mouth at once. So this box of tasting squares is a great treat if you are a lover of semisweet and bitter chocolate.

    No, the box isn't huge, but it packs quite a bit of chocolate into a small space. Purchased this on a lightning for under $13 so was very well pleased when it arrived, and the quality was so good.

    I loved the variety--milk, bittersweet, semi-sweet and extra dark. If you are a dark chocolate fan, this candy is perfect for you, although there is some milk chocolate in here, most is of the darker variety.

    I loved that these candy pieces didn't have that nasty waxy consistency some chocolate has--ack! These are really yummy.

    Yes, this small box of chocolates is a bit spendier than say grocery store candy bars, but I think the quality justifies the additional price. Plus, it's gluten-free (hmm, most chocolate is, I believe?)

    This would make a nice, thoughtful gift for the chocolate lover in your life, or is small enough to tuck into the fridge and grab a piece every now and then...it's hard to resist!

    This chocolate was fresh and very good and should serve many purposes well. I just to want to clarify for others what I wish the description would have told me. The box is much smaller than it looked online and than I expected: 4 3/4" x 6" and the chocolate squares are only 1 3/16" square. Subsequently they won't serve my purpose well. BTW, it came packed in insulated cold wraps which was a nice touch.

    Chocolate tastes good and everything but I couldn't tell the difference between this and the fancy ones my grocery store sells for a fraction of the price. Wish I knew!

    This retails for $32 (according to the Scharffen Berger website), and you get 48 conveniently bite-sized .17oz squares. At ~$15-18, that's still a pretty solid price even without the lightning deal. The quality of the chocolate is much better than what you'd expect from a company owned by Hershey's--this is a bean-to-bar chocolate, which means that they control every aspect of its production starting with bean sourcing; unfortunately, like the other Hershey's brand 'Dagoba', this is NOT fair-trade chocolate.

    Since most of the chocolate in both boxes is dark chocolate (62-82%), this wouldn't make a great gift for someone who only likes milk chocolate.
