    First off, the tin is gorgeous. You would be hard-pressed to find a more artful tin of cocoa for gift giving. I wouldn't feel bad to gift one tin of this wrapped in a beautiful paper as a birthday or holiday present - unwrapped it could be given as a hostess gift without worries of looking 'cheap'. Careful thought was taken on the container this cocoa would be housed in. A fine gift for a man, too, as it's not 'foo-foo' looking.

    Upon opening the tin, there is a silver packet of cocoa, sealed tightly. Expiration date is 2 years from now (as IF it will last that long). On the first cut of the packet, the aroma of chocolate filled my senses. Deep, rich, pleasant chocolaty promises of tastes yet to come. I will be keeping the cocoa inside the silver packet as opposed to pouring it into the tin directly.

    Now, on to the best part ... the taste of the cocoa. I licked the cocoa off the silver packet top that I cut off and wow, what an impact. The first taste to hit was definitely chocolate - and not overly sweet chocolate I might add; was a bit bitter at full strength but expectations of my first mug of cocoa were pressing at this point. I put 8 oz milk, 1 oz half and half, and 1 oz heavy cream into my Back to Basics Cocoa/Latte maker, then added 3 heaping teaspoons of Bellagio Sipping Chocolate, a splash of vanilla, and a spoon of sweetened condensed milk, then turned the machine on. Within minutes a rich, well blended, decadent cocoa was soon at hand. Poured it into a 16 oz mug, (nuked it for 20 seconds since the cocoa/latte maker doesn't make it as hot as I like it) and topped with fresh whipped cream. Realizing that it wasn't 'plain' cocoa at this point, the resulting flavor was still utterly delicious. The cocoa taste was still the star and rang through even with the add-ins, the flavor of chocolate was pronounced: strong and bold, yet smooth with a slight 'fruitiness' was to be discovered.

    Now for the final merits: YUM!

    I don't know if I'm not a diligent enough reader, or if the description was vague, but this is not the drinking chocolate I thought I was buying. In my experience, a true drinking chocolate is a flaked real chocolate. This is a powder. Now, it's a very good powder, beats your spoonful of Nestle Quik like a rented mule, but it's not the smooth consistency and rich chocolatey flavor that comes with melted shaved chocolate stirred into your beverage. Again, this product was tasty, but the texture left something to be desired. I personally will not be repeating this experiment.

    This is a very good chocolate. It's not too sweet so it's great for anytime. It says to use 3 tablespoons but i use less than that and it's still quite chocolatey. It's still not as good as trader joe's but it's a close second. It's definitely cheaper than trader joe's which is why I have this delivered monthly. It mixes easily with just a spoon on microwaved milk unlike some cocoas where they tend to clump too much and you have to stir for a long time.     My original review from 2009: I am incredibly picky when it comes to chocolate, and most chocolate mixes are simply sugar with a few specks of chocolate. Bellagio sipping chocolate is by far the BEST chocolate mix I have ever tried...and I've tried many! It is a little more expensive than other brands of cocoa mix, but you definitely get what you pay for. A little goes a long way, and you can make anything from hot cocoa to thick sipping chocolate to "spoon" chocolate to chocolate mousse....the list goes on and on. I even made a great "chocolate emergency" frosting by simply mixing some of the chocolate in with a bowl of whipped cream. And as an added bonus, the tin the chocolate comes in is super cute and makes a wonderful gift.

    EDIT in 2014: I hoarded this stuff a few years ago when it was the original formula and came back for more. I see that the ingredients have changed...noooooo!! Cocoa used to be the first ingredient, and now I see it's sugar. What a shame! This was hands-down the BEST, and now I won't be buying it again. I'm docking this down from 5 stars to 1 because I'm so irritated that this company would ruin a good thing. Now I'm back to square one trying to find a hot chocolate mix that is more chocolate than sugar. hmph.

    If you like a rich sweet chocolate taste, I believe you will be disappointed. I did not find this product to have a sweet taste, or a very chocolate taste. For me, the taste was more toward a chocolate latte: not really sweet and only a hint of chocolate. Also, for the quantity you get, the price is expensive compared to other similar products. Finally, if you use milk (probably true for other liquids too), the product needs very warm or hot milk to dissolve; it is just a lumpy powdery mixture in cold milk.

    I originally received this chocolate as a gift. I wondered what I would do with it. Now I drink it every morning. I mix two heaping teaspoons of espresso powder in 6 oz. of hot water, add 1 T. of the Bellagio chocolate, mix well and add 1 cup of low fat milk. Goodbye Starbucks! This is my go-to morning drink. It is marvelous.
