Easy and Elegant Almond Fudge

Directions

Preheat the oven to 350°F. Line an 8-inch square baking pan with 2 sheets of plastic wrap, one going in each direction, leaving an overhang of several inches on all sides. Smooth out any wrinkles. Shake the almonds in a coarse strainer over a bowl and discard any tiny particles. Toast the almonds on a baking sheet for about 12 minutes, or until golden brown and fragrant. Transfer to a plate and let cool. Melt the chocolate with the sweetened condensed milk over medium-low heat in a medium heavy saucepan, whisking constantly until smooth. Whisk the almonds, vanilla and salt into the chocolate mixture to combine well. Transfer to the prepared pan and spread evenly with a rubber spatula. Let cool to room temperature. Cover with another sheet of plastic wrap and refrigerate for about 3 hours, or until thoroughly chilled. Invert onto a cutting board and cut the fudge into squares. Serve at room temperature.

Ingredients:

  • 1 pound DAGOBA CHOCODROPS Premium Chocolate Drops

Not vegan, has milk, inaccurate picture
The ingredients in the product pictures show that milk is less than .1%, however, when your product arrives, it just shows that there is milk added (no less than .01%) I contacted Dagoba to confirm if it has milk or not. Those with milk allergies or vegans should not get this product even though several vegan websites have reccomended it, the ingredients have changed. I plan to see if i can return this.

I find with chocolate in general that it disappears very quickly around me :)
These Dagoba Chocodrops I have found I can just have a few drops a day so they last a longer time.
The taste is good & they are satisfying and organic.
They are quite strong at 74% and not very sweet but they do the trick for me and are economical in the long run.
The bliss factor is not so high as for example Taza Chocolate Mexicano Chocolate Disc, Coffee, 2.7 Ounce but those only last a day or two max where as these drops have lasted me about a month, though I must admit I have also eaten other chocolate given me over the holidays.
The other thing I like about Dagoba chocolate is that the lecithin in it is non-GMO which is fairly rare even in organic chocolate.
It's suggested to cook with it but I never have. You could add more sweetener if you do cook with it if you like.
If you like strong dark chocolate you will prob. like these.

The chocolate is very good. The reason I'm giving this one star is because it arrives in a box 4 times it's size, wrapped in thick foam and ice packs. From a customer service perspective, that is wonderful attention to detail--making sure the product arrives un-melted. From an environmental perspective, TERRIBLE idea. Plus I think they out to explain in the description the efforts they'll make to keep it un-melted, so consumers can decide if they want to cause all that packing waste. Again, the chocolate was very good.

This chocolate is just the right amount of sweet and tastes great! With that said, I don't recommend ordering in the warmer months. I picked a cooler week to order and they were delivered by noon (came straight into the air conditioning). When I opened the package, I had a solid block of chocolate.. not ideal for snacking, which is what I had intended them for. I will order again, but will wait until it is much much cooler outside.

I'm a self-confessed chocoholic. I only eat dark chocolate and I eat less than the 1 oz. recommended to keep it healthy. I learned a long time ago that chocolate must have at least 70% cacao for any health value. Many people eat milk chocolate thinking it's healthy but they are mistaken. I don't eat it for the health value. I eat it because I love the rich flavor. My husband has been buying another brand of chocolate in the form of dark chocolate chips from the grocery store so I won't eat too much at one time. I like the chocolate chips he buys but discovered one day that it only had 60% Cacao in it. I went online to look for chocolate chips that had at least 70% and discovered Dagoba. I buy Fair Trade and organic products when they are available no matter what the products are. When I saw the ad that described Dagoba chocolate drops and saw that it had more than 70% Cacao (it has 73%) I was sold. I also know that the more cacao in chocolate the less sugar it contains and I try to limit the amount of sugar I eat. These drops aren't shaped like chocolate chips but they're about the same size and they taste divine. The first time I ate a few pieces I was in love. I'm savoring the drops and eating only a few each day because I can't afford to buy Dagoba often. It's too expensive for me to eat every day. If I didn't want chocolate that I could eat daily maybe it wouldn't seem so expensive. If you want great flavor, Fair Trade and Organic chocolate, you'll love Dagoba Chocolate drops.

I've ordered these twice in the past two weeks. After searching for organic chocolate chips, I happened upon these. I intended to cook with them, but I haven't managed to get them from the "munching" stage to the "saving for cooking" stage yet. These are yummy! As compared to Green & Black's organic dark 85% cacao bars, there is no contest - these are the perfect amount of sweetness; somewhat bitter chocolate as you'd expect with dark chocolate, but not so bitter that they are inedible. Calories are about 4.6 calories per gram whereas Green & Black's is 6.5 calories per gram. I appreciate the fact that they're fair trade; I like supporting fair trade products. I'm excited to experiment with cooking with these! OH - they also come shipped in a cold pack, at no extra charge, to ensure that they don't melt. Since I live in rural South Georgia and it is now summer, if they don't melt reaching me, they won't melt getting anywhere in the lower 48, in my opinion (weather was in the upper 90's both times these were delivered). I'll be ordering a lot more of these...

The Chocolate itself is fantastic. I had purchased this to put into Trailmix but upon arrival there was literally 4 chips. the rest was a big solid chunk of chocolate, you could clearly tell the chocolate had melted and then hardened. It is more of a shame on Amazon for not ensuring the proper feel of contents prior to shipping. It actually made my Ninja food processor work to break it up.
